Soft Caramel Recipe

  • 1 C. Butter (NOT margarine or other combo)
  • 1 16 oz pkg (2-1/4 C) Brown Sugar
  • 1 tsp. vanilla (added at the end)
  • 1 can sweeten condensed milk
  • 1 cup light corn syrup

Grease 9”X13” pan with butter.

Melt butter over low heat in heavy 3 qt or larger sauce pan.

Add brown sugar, condensed milk and corn syrup, stir well. Cook and stir over medium high heat to boiling.

Carefully clip a candy thermometer to side making sure it doesn’t touch the bottom of the pan the is well into the mixture.

Cook, string constantly over medium heat until thermometer reaches 238°.

Remove from heat and add vanilla, quickly mix in vanilla in then pour into greased pan.

Let cool until set and caramels are firm.

Remove from pan, putting onto cutting board. I sue a pizza cutter or large knife to cut into desired pieces.

Wrap in plastic saran wrap, or you can buy the pre-cut wrappers in silver, gold and red at Michaels in the baking section.

1 Pan makes about 150-200 caramels
